Description

Lactic Acid Bacteria (LAB) are commonly found in Brazilian industrial ethanolic fermentations, with the gender Lactobacillus being one of the most commons. These microorganisms are facultative anaerobic, gram positive and capable of producing lactic acid from sugarcane juice when they are under anaerobic conditions. Due to their lactic acid production capacity, LAB have been widely used for fermentation industries. Lactobacillus fermentum has been widely studied due to its use as a probiotic and also in the chemical and food industry. Their phylogenetically closest species are Lactobacillus gastricus and Lactobacillus equigenerosi.
